Jim Dempsey
In
1981 Jim Dempsey began his career in the natural foods business.
In 1989 he opened DublinÕs first organic fresh food store which
was acclaimed in the Bridgestone Food Guides with author John
McKenna welcoming him as an Ôorganic pioneer!Õ He appeared on
the radio and TV; and had features in The Irish Times food pages.
His first venture into professional catering
was in 1993. The task was to cater for an international conference
of leading figures from the world of holistic health and well-being.
The brief was to provide in organic, vegetarian and vegan foods,
for 2,000 people for a week! His team received one of three standing
ovations given by the 1,600 delegates on the closing night.
A professional career in the kitchen was born,
and in 1995 he had his first job as a chef. In 1997 he began a
private catering business. He had private and business clients
in Ireland, Holland and the U.S.A.; catering for workshops and
retreats, corporate events and private weddings. Jan De Vries,
the world-renowned herbalist, proclaimed Jim as Ôthe best natural
foods chef he had ever metÕ at an event he catered. He also began
to teach on short and long stay residential programs in Ireland
and the USA.
In 2002, fulfilling a long held desire to live
on the west coast Jim moved to Galway and back into commercial
kitchens. He worked with three times world champion chef, Padraic
Kielty in Galway. He also worked with resident chef and nutritionist
Annette Joyce at the Slanœ Cancer Support Centre in Galway.
He finished two years study in Complimentary
Health Therapies in Cork to widen his practise. He continues to
work in the natural and organic food business, most recently as
a chef in Chrysalis Retreat Centre in Wicklow. He began to practise
as a therapist in Cork and now in Dublin. He is qualified in Aromatherapy,
Massage (Sports and Remedial, Swedish and Indian Head), Reflexology,
Reiki and Pranic Healing.
He also completed several workshops dealing with
Spiritual Consciousness and Development with leading USA based
trainers. He has led spiritual retreats and workshops in Ireland
and the USA.
He is the father of four children, each with
diverse lives and abilities. He is currently living in Dublin,
Ireland and is involved in a few voluntarity organisations promoting
cultural and educational exchange. He lives with his long term
partner, Vic, having fulfilled many of his dreams and goals.
His approach is very simple. Beyond dogma and
creed, Jim is a consummate communicator and can interact with
all kinds of people. This perhaps is his greatest talent. |
